fattened goose-liver or duck-liver paté. Foie gras, the most famous of which is produced in the Périgord region, is an expensive delicacy. It is produced from the livers of geese or ducks, which have been force-fed ( gavés) with too much grain, before slaughter, in order to increase the size of the liver. The technique has been used for over 4000 years, but has recently been criticised on the grounds of animal cruelty, and a number of countries have banned the process.
